Baked Cod Casserole

This fish casserole is all about rich flavors and hidden goodness! We use dry white wine and Gruyère cheese to amp up the taste. And before it hits the oven, we sprinkle some seasoned whole-wheat breadcrumbs on top for that nutty goodness and extra fiber. If you feel like switching it up, go ahead and use any mild white fish you like!

Ingredients

  • 2 tbsp extra-virgin olive oil (divided in two)
  • 2 medium onions (very thinly sliced)
  • 1 cup dry white wine
  • 1 1/4 pounds cod (cut into 4 pieces)
  • 2 tsp chopped fresh thyme
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2 cups finely chopped whole-wheat country bread (about 2 slices)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 cup finely shredded Gruyere

Directions

  • Preheat the oven to 400 degrees Fahrenheit
  • Heat up a tablespoon of oil in a big ovenproof skillet. Throw in those onions and let them soften up for about 5 to 7 minutes, stirring every now and then.
  • Pour in that wine and crank up the heat. Let it reduce for 2 to 4 minutes, stirring occasionally.
  • Now, put that cod right on top of those onions. Sprinkle on some thyme, salt, and pepper for good measure.
  • Now, cover it up nice and tight with foil or another oven safe cover, and slide it into the oven for 12 minutes.
  • To finish, toss the breadcrumbs in a bowl with the remaining tablespoon of oil, paprika, and garlic powder. Spread that delicious mixture all over the fish. Can't forget the cheese! Sprinkle it on top of the breadcrumbs.
  • Leave that top off, and let it bake for about 10 more minutes, until the fish is cooked through.
